I’m a big fan of one-pot meals and anything that feels low-effort but still gets the job done.

Some nights I plan dinner. Other nights, I’m just pulling things from the fridge and hoping for the best.

This Instant Pot taco pasta is one of those “always works” meals in our house. It comes together fast, everything cooks in one pot (yes—even the pasta), and everyone actually eats it without negotiation or side-eye.

It’s also a great way to stretch ground meat into a full, satisfying meal using ingredients I usually already have on hand.


What I Usually Serve It With:

  • A Southwest or Santa Fe-style bagged salad kit
  • Quick quesadillas if I have time to throw some tortillas and cheese on the griddle—or if the kids are suddenly starving
  • Or just the pasta by itself—no shame in a one-dish night
